Sounds good, doesn\u2019t it? In La Perla, we want you to also \nbe able to surprise your friends and family and that is why our head chef Urko \nArroyo describes how to make <strong>one of this season\u2019s most successful recipes.<\/strong><\/p><h3 class=\"wp-block-heading\"><strong>Bresse pigeon over creamy rice with a pur\u00e9e of pears in wine<\/strong><\/h3><p><strong>Ingredients:<\/strong><br\/>\n2 pigeons<br\/>\n200 gr of rice<br\/>\n100 ml of cream<br\/>\nMeat stock<br\/>\nPear pur\u00e9e<\/p><p>First of all, we\u2019ll show you our secret for the meat stock and mashed potato recipe.<\/p><ul class=\"wp-block-list\"><li><strong>Meat stock<\/strong><\/li><\/ul><p>1 onion<br\/>\n1 leek<br\/>\n2 carrots<br\/>\nThe bones of 2 pigeons<br\/>\n1 bottle of red wine<br\/>\n1 L of water<\/p><p>In order to cook up a good meat stock, saut\u00e9 all the vegetables. Once \nthe vegetables are saut\u00e9ed, add the toasted pigeon bones. Add \nthe red wine and reduce to \u00be. Meanwhile, sear the breasts on the \ngrill. With the meat juice from the pigeon carcass and \na little cream, prepare a creamy rice to use as a base \nfor the pigeon.<\/p><p>On the other hand, make a pear pur\u00e9e cooked in red wine. When \nserving, place the rice as a base, the grilled breasts \non top and bake for one minute. The right thing to do is \nto place the wings and thighs on each side, and a drop of pear pur\u00e9e \nnext to them. And enjoy!<\/p><p>The winter dishes are filling and full of flavour.
