Chez La Perla, nous voulons que vous puissiez surprendre aussi vos proches, c\u2019est pourquoi notre chef de cuisine Urko Arroyo nous explique <strong>une des recettes avec beaucoup de succ\u00e8s dans cette saison.<\/strong><\/p><h3 class=\"wp-block-heading\"><strong>Pigeon de Bresse sur riz cr\u00e9meux avec pur\u00e9e de poires au vin<\/strong><\/h3><p><strong>Ingr\u00e9dients :<\/strong>\r\n\r\n2 pigeons\r\n\r\n200 gr de riz\r\n\r\n100 ml de cr\u00e8me\r\n\r\nJus de viande\r\n\r\nPur\u00e9e de poires<\/p><p>Avant tout, on vous montre notre secret pour la recette du jus de viande et pur\u00e9e de pommes de terre.<\/p><ul class=\"wp-block-list\"><li><strong>Jus de viande :<\/strong><\/li><\/ul><p>1 oignon\r\n\r\n1 poireau\r\n\r\n2 carottes\r\n\r\nLes os des 2 pigeons\r\n\r\n1 bouteille de vin rouge\r\n\r\n1 L d\u2019eau<\/p><p>Pour cuisiner un bon jus de viande, sauter tous les l\u00e9gumes. Apr\u00e8s avoir saut\u00e9 les l\u00e9gumes, ajouter les os des pigeons grill\u00e9s. Ajouter le vin rouge et r\u00e9duire aux trois quarts. Entre-temps, saisir les filets grill\u00e9s. Avec le jus de viande obtenu des carcasses du pigeon et un peu de cr\u00e8me, \u00e9laborer du riz cr\u00e9meux pour le mettre sur la base du pigeon.<\/p><p>D\u2019autre part, faire une pur\u00e9e de poires cuites au vin rouge. \u00c0 l\u2019heure de pr\u00e9parer l\u2019assiette, mettre le riz comme base, les blancs grill\u00e9s sur le riz et cuire au four pendant une minute. Mettre \u00e0 chaque c\u00f4t\u00e9 les ailes et les cuisses et, \u00e0 c\u00f4t\u00e9, une larme de pur\u00e9e de poires.
